Please try our delicious, healthy, low GI , DEVINE Corn, Zucchini and Chickpea Fritters

Makes approx 24 Servings

Ingredients:

  • 400g Chickpeas drained & rinsed
  • 410g Creamed Corn
  • 1 large zucchini, grated
  • 11/2 Cups of Gluten Free Self Raising Flour
  • 2 Free range eggs
  • ½ Cup Almond Milk
  • ½ Cup chopped flat leaf parsley & coriander
  • 1 Garlic Clover Crushed
  • Pepper to season

 

Directions:

  1. Spray a large frying pan with oil. Heat over medium-high heat.
  2. In a bowl whisk together eggs and milk
  3. Add flour, whisk then add all ingredients. Stir together.
  4. Slowly cook ¼ of a cup at a time into frying pan.
  5. Cook for 2 to 3 minutes each side or until golden and cooked through. (usually cooking 3 at a time)
  6. Serve with 2 poached eggs, avocado & smoked salmon
  7. Enjoy!

Note: Feel free to serve as a breakfast, lunch or dinner option with a lean protein of your choice. We prefer a nice grilled fillet of salmon with a tomato. Add a mango, chili and lime salsa and you will be drooling. Have fun with it!.
