Curry Coconut Rice salad

1 cup of brown rice
1 cup of Quinoa (I used red for flavour and colour)
1 red capsicum
3 shallots
2 green apples
1/4 cup of rasins optional
1/2 -3/4 cup of apple cider vinegar
1/4 cup of coconut oil
1 teasppon of curry powder (I use Keens) add more if you like a bit more spice.
Cook your brown rice and quinoa according the instructions on the packet, and in seperate saucepans.
Meanwhile chop / dice up your apples, capsicum and shallots.
Once Rice and Quinoa is cooked pour into a large bowl and allow to cool.
Stir thru chopped fruit and veg.
In a small saucepan over a low heat stir together the coconut oil, apple cidar vinegar and curry powder until the coconut oil melts. pour over your salad. enjoy! this salad will keep for a few days in the fridge in an air tight container.
