As the weather warms up slads become popoular again, they are so quick and easy and the best part its raw, nutritent dense and colourful, packed full of vitamins and minerals and live enymes and best of all naturally cleansing for rthe body.
So who doesnt want to jump in summer and the beautiful foods that it has to over.
This is one of my favourite salads, you can make it and it will last up to 3 days in the fridge in an air tight container. Make it for dinner and now we have lunches prepared. Add your favourite protein i love grilled salmon with mine.

Ingredients 

Dressing 

80ml of grape seed oil

50ml of light soya sauce

1tbsp sesame oil

1 1/2 tbsp of organic honey

juice of 1 lemon

whisk all ingredients together.

Salad 

1/2 red cabbage finely shreaded

2 carrots grated

1 large fresh beetroot grated

3 lebanese cucumbers, halved length ways, remove seeds by scraping with a teaspoon and slice thinly

1 bunch of mint leaves, washed roughly tear

1 bunch of coriander, washed and roughly tear

2 tbsp of sesame seeds to serve.

Mix all ingredients together in a bowl, sprinkle over sesame seeds  and serve with dressing on the side.

Note by not adding the dressing to all the salad will allow the salad to keep for 2 days in an air tight container and it wont go soggy.
