Warm Chicken & Pumpkin Salad!!

This is my EASY go to meal, when home late from training, plenty of Protein, fats and carbohydrates. A light meal on the stomach yet leaves you feeling full and satisfied. Also makes for great lunches. Can be made with lamb loin chops a beautiful eye fillet steak, fish or chickpeas for a vegetarian variety.

Prep – cooking 10minutes
Ingredients
500g chicken tenderloins
100g of Feta
50g of sundered tomato strips
2 cups of chopped pumpkin
160g bag of Rocket and baby spinach leave mix
1/4 cup of shelled pistachio nuts or pine nuts
1 teaspoon of olive oil
Optional extra table of plenty GF pistachio Dukkah to serve
Method
Poach chicken in boiling water or cook in a fry pan.
Steam Pumpkin until cooked but still firm!!!! be cafe full not to over steam.
Place olive oil in a pan and lightly toast pumpkin until golden brown on each side add pistachio nuts and lightly toast.
divide rocket mix evenly onto 2 plates, add cooked pumpkin and nuts, crumble over feta, add sundered tomato stripes, stack your cooked chicken on top and sprinkle over a little extra olive oil or flaxseed oil and Dukkah.
